Dinner from the cupboards
I made a few trips to the grocery store this weekend, but managed to not get anything to take for lunch this week. I decided to stick it out until next weekend anyway, since I had some cans of soup, and I have bread. It’s not my favorite, but I can be happy with that for a week.
However, we don’t have a can opener at work, so I packed mine to use with my soup today. I didn’t end up using it, since we had a Lunch and Learn, where the company provides lunch for us while we have a training. So I just left my lunch bag with my can opener in it at work.
Turns out, I need that can opener to open the can of Amy’s chili I was planning to use for dinner. When I discovered this, I almost ran out to the supermarket to either buy a new can opener, or buy some eggs, which also make a delicious dinner. Sure, I have rice and pasta in the cupboard always, but I live in a society where I don’t expect to eat boring stuff if I don’t want to.
But on my way out the door, after I’d already locked the dogs up and everything, I decided I should be able to find something non-canned with which to make my dinner. And I did. I made some little “triscuit pizzas” that I used to love when I was a kid. (Okay, I basically still eat like a 10 year old most of the time.) Take a triscuit, put a little spaghetti sauce on it, add some shredded cheese, microwave and voila! Delicious.
What is your favorite meal to make when you are “out of food”? What food do you always have in your cupboard?
